Within the Miahuatlán region of southern Oaxaca sits the small community of San Luis Amatlán, where the Gutierrez family make agave spirits in the traditional style of the area.
That means roasting locally grown agaves in a conical earthen oven, chopping them up by hand with a machete before milling them in a chipping machine, fermenting in a slatted wooden tina, and double distilling in a copper alembic still with a refrescador.
This batch was distilled in 2019. It’s our second release of 100% Tobala from maestro and amigo Nicolas. The first, which was distilled in 2018, can be found here. The differences between these vintages is quite stunning. We aim to continue bottling this expression as new batches are available, thereby showcasing the amazing talents of the producer in getting the best from different harvests, as well as the diversity that exists even within the same species of agave and in the same region.

House Tasting Notes:
High octane minerality. Bright and fresh on the nose. Initially a little salty on the palate before oily herbaceous tones kick in and complement the light background smoke to create a long and complex finish.
