We’ve been visiting and working with Nicholas and his family since 2017.
On our many return visits there's always something new to try, although never yet quite as bonkers as this expression.
It harks back to another era, when producers would just fill their ovens with whatever was ripe and ready from the land at the time. In this case that includes Jabalí, Tepextate, and Sotol… but you’ll have a very hard time picking out any one of their unique flavours.
As is the case with all small batch artisan agave spirits, there will never be two that taste exactly the same. But with this one there’s unlikely to be another that comes anywhere near it.

House Tasting Notes:
Funky as all hell. This experimental batch was produced by maestro Nicholas in 2019. It contains 10 different species of agave as well as Cucharillo (Dasylirion - know as Sotol in more northern parts of Mexico). Proofed to a punchy 51.9% and made with agaves that were left to dry ferment out of the oven, this totally one-of-a-kind expression does not pull any punches. Super musty yet mineral all at once, it’s quite mind-blowing.
