Delfino Tobon Mejia makes mezcal as part of his wider farming activities in the remote community of San Pablo Ameyaltepec, Pubela. His fascinating home made, 3-plate column still allows for a single pass distillation. The results are crisp and complex with very little smoke.
The Papalote plant in this region appears large and relatively light in colour. Generally recognised as Agave Potatorum, in all likelihood it’s a local hybrid or Potatorm, Seemanniana, and maybe even Cupreata. These crown shaped agaves have been revered for generations for their medicinal qualities.
Batch DT-01 was produced in February 2019, when we first started working with Delfino and the walls of his palenque were made of scrap metal, and the boiling chamber of the still was a recycled steel drum.

House Tasting Notes:
A crisp citrus nose opens up to a surprisingly rich and creamy mouth feel. There’s a robust backbone to it that takes us right back to the farmyard environment it comes from. A savoury kind of meatiness comes through the mid pallet before the citrus returns for the finish with a light smoke. Fascinating and increasingly moreish.
