Amando Alvarez is becoming a bastion of tradition in his remote region of northern Oaxaca. Every producer in the community of Santa María Ixcatlán ferments the super old-school way… in a stretch animal skin… a tradition that has been amazing well hidden until relatively recently.
With his own brand, Ixcateco, Amando is re-energising this tradition and his heritage.
Amando produces primarily with maguey Papalome, which is harvested wild from the hillsides of the community. But we are lucky to present this rare micro-batch ensemble of 3 different agave varieties, produced in early 2020.

House Tasting Notes:
Rich, sweet, and deep. It's got the mellowness you would expect from all the natural materials used in production, but proofed to a powerful 50% abv it has a spiciness on the nose that promises a lot. And indeed it delivers. There’s a big hit of jalapeño on the palate that lingers forever, while allowing woody leathery tones in and out. Is really quite exceptional.
