Profile notes: A little cheddar cheese with notes of cinnamon. Relatively lactic and acidic compared to Angustifolia (Espadin) down in Oaxaca, but also with a smooth edge to it that’s a little reminiscent of the tequilas being made near by. It’s how those tequilas might have been made hundreds of years ago. Incredibly moorish and delicious.
In the coastal Cabo Corrientes region of northern Jalisco sits the small community of El Tuito, and within that ‘Charco del Sol’ - the tiny distillery of Maestro Tabernero Joaquin Solis.
Joaquin and his team roast their agave in a an underground conical oven before milling it by hand - first cutting with a machete and then mashing with wooden mallets on top of a tarpaulin.
The airborne yeast in this relatively warm and humid region allow the mash to ferment in open air vats. Finally the fermented mash is double passed through a rustic still comprising a clay pot boiling chamber and a tree truck condensing chamber with copper lid and a liquid capture / run-off made from a rolled agave leaf.
