This region of Oaxaca has a greater history of ‘mota’ production (marijuana) than agave spirits. In recent years it’s become a significant growing region for agave that’s then produced in more famous communities like Santa Catarina Minas.
But there’s a couple of people who have been making spirits for the community in the most rustic ways imaginable. Behold this incredible micro batch clay pot Arroqueño.
