Flavour overview: Life, distilled. Black pepper upfront and tarragon in the mid palate, intertwining to create a long, grassy and complex finish. It’s like being transported to a lush and damp forest and knowing you’re surrounded by a vast ecosystem. It tastes like life itself.
Outside of the village of San Luis Amatlán, in the Miahuatlán region of southern Oaxaca, Camilo Garcia Gutierrez shares a palenque with his brother-in-law Nicolas. We proudly represent a number of batches from this palenque in the Sin Gusano range.
This is our second 100% Jabalí (A.Convallis) bottling from Camilo. And in fact just the second batch of Jabalí he’s ever made - it’s not an agave traditionally worked with in the region, although it is plentiful.
Locally harvested agave is roasted in a conical earthen oven. The cooked agave is chopped up by hand with a machete before being milled in a chipping machine. Fermentation takes place in open air slatted wooden tinas, and distillation is in a copper alembic still with refrescador.
The Jabalí (wild pig) agave, is famously hard to work with and to tame. With this in mind, Camilo passed his Jabalí through the still an extra time - it’s triple distilled, and consequently proofed to a relatively high abv.
